This 1.5kg venison roast is boned, rolled, and hand tied to give an even cook and a beautifully tender finish. Carefully prepared from wild venison, it’s full of rich, natural flavour and works just as well for a slow pot roast as it does for a traditional oven roast. On busier Sundays, when we’ve been out on the croft, we opt for a slow-cooked, fall-apart joint served with mash and seasonal veg, leaving it to do its magic for hours without needing much attention. When time allows, we cook it medium-rare as a classic roast with all the trimmings — roast potatoes, Yorkshire puddings, mash, and seasonal vegetables. Lean yet satisfying, this is a proper centrepiece cut made for sharing and enjoying together.
